WAGYU TRANCHEN VOM RACLETTE IN TERIYAKI SUACE

FLAT IRON STEAK FROM RACLETTE

For the next raclette evening we can recommend our great marbled Flat Iron Steaks. You can prepare the teriyaki sauce quickly and easily according to this Asian recipe🥢.

Ingredients for 4 people:

  • 1-1.2 kg Flat Iron ➡ available in the online store
  • Salt
  • Pepper
  • 2 tablespoons sesame seeds
  • 2 tablespoons chopped coriander
  • 60ml soy sauce
  • 60ml water
  • 2 tbsp rice vinegar (mirin)
  • 2 tablespoons brown sugar
  • 3 cloves finely chopped garlic
  • 2 tsp chopped fresh ginger

To make the teriyaki sauce, first peel and finely chop the ginger and garlic. Then sauté the ginger and garlic in the pan. Add sugar and let it melt while stirring constantly. Soy sauce, water and mirin are added. When everything is well mixed, the teriyaki sauce can be reduced over medium heat, stirring constantly.

Meanwhile, you can slice the Wagyu meat across the grain into thin strips. Afterwards, the sesame seeds should be toasted a little in a pan without fat.

Then the raclette evening can start: Already during the preparation on the raclette, the meat can be drizzled with Teriyaki sauce. We recommend grilling the meat to a maximum of medium (52°C). Finally, sprinkle some sesame seeds and coriander on top. As a side dish we can recommend grilled vegetables such as peppers, mushrooms and snow peas.
